So, as promised, I made my vegan baked good for the week. It turned out wonderful. I made Chocolate Cupcakes with this recipe from Bitter Sweet. I was extremely impressed with how they turned out. Who needs eggs and milk to make a rockin’ cupcake? Here are some pictures…
When they came out of the oven they were so fluffy and moist looking. I was skeptical about the consistency until I picked one up and realized that they were chocolatey and delicious. I knew they needed to have some icing on them to make them look pretty. I opted for a powdered sugar glaze. I added the powdered sugar, almond extract and some food coloring. Then I put chopped almonds on them. I was impressed. I knew they were good when Omnidude took out two in two bites each. His mother, who’s visiting, also ate two. No one even said, “wow, these are good for vegan”. It’s amazing to me how people don’t realize how little you need eggs. Funny. Now I just need to make my crafty project and I’ll have accomplished my goals for the week.

Eggs are sooo 1999! Ha! But really, you don’t need eggs for a lot of yummy desserts…the only real problem comes with say a souffle or a merigue…but who needs that stuff when you can eat your yummy chocolate cupcakes?!

Yep–who needs eggs and milk? People are always surprised to hear you can bake just as well without them. The insidious power of the meat and dairy lobby is a tough nut to crack.

Nicely done! They look scrumptious!!! VCTOTW is a super good book to bake tons of yummy cupcakes… I get vegan cupcake requests from all my omni friends using recipes out of that book!
