Yummy lunch… July 14, 2008

Well, I’ll keep this short. Vegan Saturday is becoming more of a tradition it seems. Mondays are not working out what with work and the craziness that is my life. However, Saturday has become the day that I have to fend for myself. It’s an Omnidude and Me tradition. We can’t decide what to do with lunch so we just give up and make our own. I opted for a salad.

Oh, and what a salad. After I got back from the gym I had to carboload. My body was screaming feed me. That, and my trainer is out to get me. She is determined to torture me into some sort of Gold’s Gym submission. I can feel it already. Ok, now back on track…Salad.

Ensalada Encurtida

Salad

Black Beans

Green Beans

Onion

Artichoke Hearts

Lightlife Smart Bacon

Mushrooms

Green Olives

Capers

Dressing

Spicy Brown Mustard

Olive Oil

Red Wine Vinegar

Salt and Pepper

Take everything and mix it all together. Make sure it looks pretty for the picture. Eat. Encurtida means pickled. Since the dressing has some vinegar and the olives and capers are somewhat pickled, I thought the name fit.

I forgot to mention, I won!!! I, along with Magpie and Erin, named The Happy Herbivore’s tacos. I feel extremely privileged. Not to mention hungry.

I had to start taking a new medicine today and it is making me feel a little ooky. I used to take it to handle diabetes, however I had stopped taking it because I had gotten it under control. Now, it’s not so under control. My body has decided to regress to what I used to deal with. Yes, it’s all out of whack since I didn’t take the meds. It bums me out because everything else I do is so natural and clean that this pharmaceutical addition makes me feel like a physical failure. Hopefully, it will do its work and I’ll be “normal” again. What does that mean anyway?
